Peach cobbler

Browsing trough american culinary blogs this recipe caught my eye – peach cobbler made easy – apparently from Southern Living magazine (might be true, I did not check). Like many sweet recipes this cobbler require a ton of sugar and butter. Probably true buttery heaven, but for the sake of my family and friends health I decided to cut all by more than half-  result was equally delicious but less deadly.

3 tablespoons of butter, softened
1 and 1/4 cup of flour
1 cup of sugar
1tablespoon of baking powder
pinch of salt
1 cup of milk
1 can of peaches ( we will use only fruits -without syrup)
1 tablespoon of lemon juice

Grease the bottom of a casserole dish with butter.  In a separate bowl mix the flour, half of the sugar, baking powder and salt, add the milk and stir thoroughly. Pour batter into casserole dish. Cut the peaches into small pieces.  Add lemon juice and the rest of the sugar to the saucepan and heat until boiling and resulting in syrup. Next pour this hot syroup into batter – do not mix. Bake at 200 degrees Celsius for 35-40 minutes.

Serve warm with a scoop of ice cream. Wait for bright smiles and praise  😀
