Simple vegetable soup

Zupa jarzynowa

A simple and extremely tasty traditional vegetable soup:


2 carrots
1 onion
a piece of celery
half of a cauliflower
a few small potatoes
bunch of parsley
1 tablespoon butter
1 tablespoon olive oil
Bay leaf
salt & pepper
Peel potatoes, carrots, celery, cut into pieces, divide the cauliflower into florets, chopp stalk – add all to the pot. Top with water, add allspice, bay leaf, salt, pepper and parsley – bring to a boil. Cut onion into cubes and saute in butter with olive oil, add to the soup.
When the vegetables in the soup are soft season to taste with salt, pepper and a pinch of sugar if you like, or a spoon of vinegar. Serve sprinkled with chopped parsley or dill.
